Since his graduation from Johnson & Wales, he's worked as Executive Chef for several restaurants and resorts, including the Bradley Inn in New Harbor, Maine, two eateries in Rockland, Maine, and most recently Pier House Resort & Spa in Key West, Florida.
Labonte's cuisine focuses on the variety of products and fresh foods that come with each changing season. He finds inspiration in visiting farmer's markets and talking to local farmers.
In his spare time, Labonte likes to ride his bike and relax in the seclusion of the many quiet coastal hideaways in Maine. I'm not a believer in calling a dish perfect, he says. Everything can be better. Once you say something is perfect, you stop developing. That's true for any industry, not just for food.
